We all know that magnesium is good for our muscles but often we find ourselves reaching for a supplement instead of looking at our diets. Here is one of my favourite ways to get magnesium into my body!
Chocolate dipped strawberries (approx 285mg of magnesium & approx 360 calories)
Ingredients
1 cup of whole ripe strawberries
25 grams cacao butter
1/3 cup high quality cacao or chocolate powder
1 tsp vanilla powder or essence
1tsp-1 tblsp of natvia or other natural sweetner, depending on taste
dash of Himalayan rock salt or sea salt
1/8 cup finely chopped almonds
Directions
- Pre chop nuts and gently rinse strawberries and set aside in separate dishes
- Get all other ingredients measured out and by your side
- In a saucepan (or your thermo-mix) slowly melt the cacao butter & butter (or coconut oil) it will melt faster if you cut up into smaller pieces first
- Once your butters have completely melted slowly add the chocolate powder stirring as you go until completely dissolved
- Next add the sweetener, the vanilla and the salt, again continue stirring until completely dissolved
- Transfer melted chocolate into a serving bowl
- Dip each strawberry into the chocolate mix and then into the nut mix
- Place on a tray lined with baking paper to let chocolate cool a little more and then enjoy! They will keep for about 24 hours in a air tight container placed in the fridge if you want to make bigger batches
Notes: If you have a good quality dark chocolate skip steps 3-5 i.e. the chocolate making steps and simply melt the chocolate then follow on for the rest of the recipe.
A good quality chocolate should be high in cacao I normally go for a 90% if I buy off the shelf. For a treat I will have Pana Chocolate or Loving Earth Chocolate. If you know of any other good brands I would love to hear about them!
You can swap out the the almonds for cashews or brazil nuts or for a Christmas treat try pistachios! On occasion I also add coconut flakes, yum! Would love to hear your variations as I’m sure the other readers would too, share below!
